In answer to your question, "is not all the information (e-mails, etc) somehow able to be retrieved in some fashion from the main server?"
According to what I was told by one knowledgeable source on condition of anonymity: apparently not without a forensic scrape. We'll all know the truth of this once the transcripts of Heiss' and Stelzer's depositions are released.
